Domingo Breakfast Sandwich

This guy at work was telling me about some plantain sandwich he ate in Puerto Rico. He was explaining it to me and stopped. He said "When I make it, I'll one for you". So the next day he comes in and puts it in my hand and says "Eat it now while its warm, I woke up at 4:00 am this morning to make this".

plantain smashed down, Caramelized onions, lettuce, tomato, egg, cheese. ham and mayo.

Very shocked it was that good.. extremely filling!
